Introducing Our New High-Polyphenol Greek Olive Oil

The new year has only just begun, and already it’s brought with it an abundance of nourishment, renewal, and new beginnings.
While we’re still patiently awaiting a shipment of herbs arriving in the coming weeks, we’re delighted to finally share a new product we’ve been quietly excited about for some time.
This one carries a story, a place, and a deep sense of alignment with everything we value.
A Journey to Pelion

Last summer in Greece, we ended our travels with an unforgettable week in Pelion- a lush, mountainous peninsula overlooking the Aegean Sea, near the city of Volos.
Pelion is steeped in mythology. It was said to be a sort of divine retreat of the gods of Olympus- a place for rest, feasts, and celebration, chosen for its forests, springs, and extraordinary natural beauty. Knowing this, we felt compelled to experience the magic that inspired these stories first hand- it promised to be spectacular and it didn’t disappoint.
Where Food, Land, and Tradition Meet
We stayed at the exceptional Amanita Guesthouse, surrounded by stone houses, lush gardens and an endless supply of figs. It was there that we met Konstantinos Patistis, who guided us through an unforgettable farm-to-table experience rooted in local tradition.
As a family, we gathered the ripest seasonal produce and herbs, prepared a traditional multi-course meal together, and shared it alongside wine from Kostas’ family vineyard- and his extraordinary olive oil.
Good food.
Good wine.
Exceptional olive oil.
And long conversations about herbs, health, and preserving traditions.
We knew our philosophies were aligned and the idea to share his award winning olive oil alongside our carefully sourced herbs was born.


Why Olive Oil Isn’t Best Sourced Locally
While we are strong believers in sourcing local produce, meat, dairy, and eggs whenever possible, there are certain foods that are inseparable from the land they come from. Their flavour, nutrient profile, and unique compounds simply cannot be replicated elsewhere.
Olive oil is one of those foods.
Like liquid sunshine, truly exceptional extra-virgin olive oil- organic, rain-fed, harvested from centenarian trees, traditionally cold-pressed and unfiltered- has the power to transport you directly to the ancient groves of the Mediterranean with every taste.
Why We Chose This Oil
Beyond the breathtaking beauty and ancient, mineral-rich soils of Pelion, we were drawn to this olive oil for its remarkable health benefits and its rare sense of balance.
This is a high-polyphenol, monovarietal extra-virgin olive oil, with polyphenol levels more than double the EU health claim threshold. Unlike many oils marketed as “high-polyphenol” that are overwhelmingly bitter, this oil is beautifully balanced- robust yet refined, making it ideal for those who care equally about health and flavour.
High-Polyphenol Extra Virgin Olive Oil:
Supports heart health
Helps reduce inflammation, thanks in part to oleocanthal—an anti-inflammatory compound that works similarly to common pain relievers. It can help calm everyday inflammation, which is linked to joint pain, aging, and many chronic diseases. That familiar peppery burn in the back of the throat? That’s often the oleocanthal at work.
Protects cells from oxidative damage, helping defend the body from everyday stressors like pollution, poor diet, and chronic stress
How to Use It
As a finishing oil:
This is not an oil for high-heat cooking or frying. Its true strength shines when used as a finish, instantly elevating the simplest meals:
Drizzled over salads or steamed vegetables
As a dip for good bread with a pinch of sea salt and wild Greek Oregano
As a marinade for olives with a generous pinch of wild Greek Oregano
On pasta, grains, or beans with some fresh herbs
In place of cream or butter on rustic, skin-on mashed potatoes (extra delicious and nutrient dense with a little chicken or beef broth)
For elevated desserts
Drizzle over high-quality dark chocolate
Or over vanilla bean ice cream (add some fresh basil if you’re feeling extra adventurous)
Simple, elegant, and surprisingly impressive when you need a last-minute dessert.
A spoonful a day

Take a spoonful first thing in the morning on an empty stomach

These are just a few ideas- though we have yet to think of a single meal that isn’t improved by a drizzle of truly excellent olive oil.
